Assist Senior Sous Chef in producing quality pastry desserts for all outlets, be creative in amenities and afternoon tea. Work alongside with chef for controlling cost, quality, and follow HACCP along with maintaining food logs, daily temperature checklist, labelling, and stock rotation. Set clear expectations with junior staff and be their mentor coach ,train them and help them develop. Maintain kitchen logs for food safety program compliance. Monitor stock of kitchen supplies and food. Determine how food should be presented, and create decorative food displays. Be able to work with minimal supervision, be able to run the service alone whenever necessary. Monitor the quantity of food that is prepared and the portions that are served. Follow all company and safety and security policies and procedures. Move, lift, carry, push, pull, and place objects weighing less than or equal to 25 pounds without assistance.
Experience/ Competencies
Previous experience working within a Hotel Kitchen or similar environment preferred
Five star luxury experience essential
Experience of supervising a team essential
Skills and Knowledge
Strong Communication skills (verbal, listening, writing)
Innovative & creative
Pro-active and reliable
Able to work alone and within a team
Ability to work under pressure and lean/flat staffing models
Ability to work in a smaller but highly productive Kitchen
Education or Certification
Good level of English essential
Degree or diploma in culinary arts
Basic Food hygiene certification desirable
First aid certificate desirable
