As part of the highly anticipated billion-dollar The Grand LA project, this is the 7 th Conrad (https://www.hilton.com/en/conrad/) Hotel in the U.S. and the 1 st in California.
Located in the most exciting state-of-the-art development to come to DTLA, this luxurious 28-story hotel will have over 300 rooms, a spa, 16,000 square foot rooftop with a pool deck, 12,000 square feet of event space, and 4 food and beverage outlets. This includes a signature restaurant, outdoor restaurant, lobby bar, and in-room dining all in partnership with Chef Jose Andres' award-wining restaurant group, JoseAndresFoodGroup (https://thinkfoodgroup.com/) .
In this role, you will assist the Chef de Cuisine in overseeing the culinary team at San Laurel (https://www.instagram.com/sanlaurelbyjose/) .
The ideal candidate will have at least three (3)years of culinary leadership experience

What will I be doing?
Assist the Executive Chef in the direction and oversight of all culinary operations, to include, but not limited to, preparation and production of all hotel meals, food quality and presentation, compliance with all safety and sanitation standards and regulation, team member productivity and performance, implementation of policies and procedures, cost controls and overall profitability
Create and implement menu selections for special banquet themes and events based on current food trends and regional tastes in partnership with the Executive Chef and Director of Food and Beverage, as needed
Ensure compliance with federal, state, local and company health, safety, sanitation and alcohol awareness standards
Assist in monitoring and developing team member performance to include, but not limited to, providing supervision, conducting counseling and assisting with evaluations, training, scheduling and assigning work and delivering recognition and reward
Interviews, selects, trains, appraises, schedules, disciplines and supervises kitchen staff in kitchen during the cooking of food items.
Supervises kitchen staff in the proper preparation, cooking and garnishment of various menu items.
Assists in the development and enforcement of policies to control food cost and quality.
Ensures proper receiving, storage (including temperature-setting) and rotation of food products so as to comply with Health Department regulations.
Leads menu planning activities.
Schedules culinary staff so that proper coverage is maintained while keeping payroll costs in line.

Salary Range: The annual salary range for this role is $64,500 - $75,000 and is based on applicable and specialized experience and location.
